No-bake Energy Balls

   I cannot wait to try this recipe and you should too! Thanks Pumpkin and Peanut butter!

Ingredients

  • 1 cup of ground old fashioned oats
  • 1/2 cup of almond meal
  • 4 tablespoons of natural peanut butter
  • 4 tablespoons of agave
  • 2 teaspoons pure vanilla extract
  • 4 tablespoons vegan dark chocolate
  • 1/2 cup of whole old fashioned oats

Directions

1. Pour 1 cup of old fashioned oats into your food processor or high speed blender and blend until ground

2. Add in almond meal, peanut butter, vanilla, honey or agave, and blend until all ingredients are combined. The dough should come together and be pretty sticky

3. Add in the remaining 1/2 cup of oats and dark chocolate chips, then pulse until combined

4. Roll the dough into 1-inch balls and freeze. If they aren’t sticking together very well, add in a little more peanut butter or honey (depending on the taste you’re going for), then mix and begin to roll again

5. You can keep these frozen or keep them at room temperature. Either way, they’re delicious
