It is official! I have officially had my first Vegan Thanksgiving, and for that, I am thankful. I had the following: Black beans and rice, lentil loaf, quinoa and green bean mix, turnip greens, and mashed potatoes. If you are wondering, I was unable to convince my family to join me in eating Vegan on this occasion, but I did manage to persuade them to just cook a turkey. Additionally, for our annual family movie night, we watched “What the Health.” All in all, we are making progress. Hopefully, we can have a plant-based Christmas dinner!
