- 1/3 cup olive oil
- 2 tablespoons sugar
- 4 cups strawberries, sliced
- balsamic vinegar
- 1/2 cup fresh mint leaves
- mint sprigs, for garnish
In a blender, combine olive oil and mint. Process until smooth. Place in a covered bowl.
Combine strawberries and sugar. Toss gently. Recipe can be made up to this point a day in advance.
To serve, place strawberries on individual plates. On each plate of strawberries, drizzle 2 tablespoons of the mint and oil mixture (Mint Drizzle) and 1/2 teaspoon balsamic vinegar. Garnish with mint sprigs.
