This was one of the first dishes that I tried as a “Vegetarian and an Aspiring Vegan.” If you want to make the recipe a bit healthier, then you can substitute the white rice with brown rice!
Ingredients:
- Brown or white rice
- 1 onion
- 1 green onion
- 1 can of chickpeas
- 1 can of coconut milk
- 2 chopped tomatoes
- 2 tablespoons of oil
- 3 cloves of garlic
- Red Chilly Pepper
- 1 Ginger root
- 1 lime
- 1 tablespoon of curry powder
- 1 tablespoon of paprika
- 1 tablespoon of corriander
- 1 tablespoon of cumin
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- Top the dish with cilantro and 1 avocado
Directions:
