Light and sweet with a kick–voila!
1 orange, for juice
1 tablespoon fresh mint, coarsely chopped
1 tablespoon honey
4 cups fresh citrus fruit (such as blood or navel oranges, tangelos, and/or grapefruit)
- Squeeze orange for juice (1/4 cup); chop mint. Whisk orange juice, mint, and honey until blended.
- Peel citrus fruit; cut into 1/2-inch thick slices. Place in salad bowl. Add dressing; toss gently to coat. Drizzle with additional honey, if desired. Serve.
