Mediterranean Buffalo Burgers

Today, the Atlanta Falcons and the New England Patriots will battle head-to-head on the football field. A friend on Facebook shared his friend’s synopsis of the match below:

Travis Mikell brought up an interesting point regarding the Falcons vs. Patriots Superbowl insofar as politics are concerned, and I couldn’t help but share his wisdom with y’all. This game is more than just ATL vs New England. It’s Trump Supporter Tom Brady vs the team from John Lewis’s District. It’s America’s reactionary past vs our progressive future. It’s exclusivity and white supremacy vs inclusivity and hope. It’s Nazis vs an all-American team. Yeah, we just politicized your football, deal with it. The Falcons have to win now. They don’t have a choice. I just went there.”

Ingredients

1 cucumber
1 medium red onion
4 sun-dried tomato halves in oil, coarsely chopped
2 teaspoons rice vinegar
2 teaspoons agave nectar (or honey)
1/2 teaspoon kosher salt, divided
1 1/4 (12-oz) packages ground buffalo
1 teaspoon salt-free garlic/herb seasoning
1/4 teaspoon pepper
3 tablespoons reduced-fat crumbled feta cheese
4 whole wheat thin sandwich buns
2 cups baby arugula leaves

Directions

 

  1. Combine in small bowl: rice vinegar, agave nectar, and 1/4 teaspoon salt; stir in cucumber and onions and set aside.
  2. Combine meat, herb seasoning, pepper, and remaining 1/4 teaspoon salt; form into 4 patties. Place meat in grill pan (or on grill); grill 2–3 minutes on each side and until 160°F.
  3. Combine feta and tomatoes until blended; divide over top of patties, then remove from heat.
  4. Toast buns lightly. Assemble burgers in this order: bun, arugula leaves, cucumber mixture, burger, more cucumbers (optional), and top of bun. Serve.
