Pumpkin Soup with Bacon

Fall is here, which means that it is pumpkin season! This seasonal recipe is rich in taste and literally warms the soul. The best part making the soup is that it is relatively simple.

1 whole pumpkin
8 slices of bacon
2 cloves of garlic
Half an onion
3 teaspoons of garlic salt
1 teaspoon of olive oil
1 stalk of green onions
2 teaspoons of cumin
1 pint of water
Cilantro (optional)

1. Cut the pumpkin in half and bake for  15 minutes
2. Remove the seed and scrape the rest of the contents
3.Heat the oil in a saucepan and add the onions, chopped garlic and chopped green onions and bacon
2. Add the pumpkin contents and cumin to the pan. Stir, then cover and simmer for 10 minutes, stirring occasionally.
3.Add the water, raise the heat and bring to the boil. .
4. Purée the soup with a hand-held mixer or in a food processor. Season to taste, garnish with cilantro and black pepper and serve!
