Chicken and Potatoes

This dish is a staple meal in almost every culture. I like to add a Caribbean twist. Please see below.


  • 2 pounds bone-in chicken thighs (or chicken breasts)
  • A bag of red potatoes
  • 1 cup crispy turkey bacon, crumbled
  • Badia Complete Seasoning
  • Fresh thyme
  • 1 bundle of cilantro
  • 1 bundle of green onions
  • 2 spoonfuls of olive oil
  • 2 tablespoons garlic powder
  • salt and pepper
  • 1 lemon (yellow one)


  1. Rinse the red potatoes and then cut them into wedges
  2. Pour one spoonful of olive oil over the wedges and then mix it
  3. Pour the other spoonful of olive oil into your baking dish and spread the oil evenly
  4. Pour the potatoes into the dish and sprinkle some Badia Complete seasoning over the potatoes. Make sure it is applied evenly
  5. Wash your hands
  6. Clean your chicken with 1/2 a lemon, and then rinse the pieces of meat
  7. Season the meat with Badia Complete seasoning, garlic powder, some cilantro, chopped green onions and salt and pepper
  8. Mix the chicken in with the potatoes
  9. Preheat oven to 400º F and place the baking dish inside
  10.  Cook 4 slices of turkey bacon, and then chop them into small squares. Set to the side
  11. Once your dish has baked for 15 minutes, add the chopped bacon on top, then place the dish back inside the oven for another 20 minutes, or until the potatoes become tender and the chicken is thoroughly cooked.
  12. Remove from oven.
  13. Using the other half of the lemon, sprinkle the dish with some juice before serving
